Christmas is one of my favorite times of the year as we celebrate the birth of Jesus.
At this special time I love making gingerbread cookies for my family to enjoy.
This recipe is a keto cookie recipe made with Warrior Cacao Nibs with Chocolate Drops for that extra chocolate crunch.
Makes about 25 cookies or more depending on what shapes you cut.
You will need :
Almond flour 3 cups
Ginger ground 2 heaped Tablespoons
Cinnamon ground 2 teaspoons
Cardamon ground 1 teaspoon
1/4 teaspoon nutmeg ground
A pinch of sea salt
1/2 cup of Warrior Cacao Nibs with Chocolate Drops
1/2 teaspoon baking powder
1/4 cup of natural erythritol
1 large free-range egg
1 teaspoon vanilla extract
5 Tablespoons butter
Preheat oven/ fan 160
In a large mixing bowl, mix together almond flour, ginger, cinnamon, cardamon, nutmeg, salt, baking powder and warrior cacao nibs with chocolate drops
In another bowl, using an electric mixer, whisk butter, egg and vanilla extract.
Then, mix the dry ingredients together with the butter mixutre until a dough forms.
Roll the dough into a ball and leave it in the fridge for about 20 minutes.
When ready to bake, roll the dough out on a floured surface and cut out cookies using a christmas cookie cutter or cut into your own desired shape.
Place the cookies onto a baking paper lined oven tray and bake for about 15 to 20 minutes or untill the cookies look golden brown.
Allow your cookies to cool for about 5 minutes before eating
